Yesterday, crew member Bill brought us a whole mess of fresh crappy and bluegill fish filets. Now, if you’ve ever eaten either, you know these filets are very small and darn near impossible to cook on a grill. But we wanted grilled fish tacos, so I broke out my handy, non-stick grill basket and it worked just great. No matter how good the “non-stick” on a grill basket, fish usually sticks anyway – but in this case we were putting the filets in a taco shell, so it just didn’t matter if they held together!
Of course, if you can’t get crappy or bluegill files, tilapia or catfish will work just fine! Catfish is one of the easiest to grill, as the fish naturally contains more oil.
INGREDIENTS:
2 lbs. fish filets
1 pkg. McCormick Chicken Taco Seasoning Mix
2 tbs olive oil
2 tbs butter
1 lime (juiced)
1 pkg. corn tortillas (with square bottoms)
1 pkg. flour tortillas
1 cup shredded Mexican Four Cheese blend
1 tomato, diced
1 cup shredded green leaf lettuce
1 cup red onion, diced
1/4 cup fresh parsley, chopped

Sprinkle the filets with olive oil and season with the package of taco mix. Preheat the gas grill, and place the filets in the grill basket. Place the basket over the hot grill and back the burners down to low. Cut the butter into small pieces and dot the fish. The butter will flare up when it hits the flame, so just keep a close eye and move the basket around to avoid over browning. Flip the fish after about 5 mins. and cook the other side.
Our filets were very small, so total cooking time was only about 10 mins. This may vary depending on the filets you are using.
We made our tacos using both crispy corn and soft flour tortillas. Wrap these in foil and place on the grill to warm while the fish cooks. Put your sour cream and guacamole on the flour tortilla and fill the corn tortilla with all the other ingredients!
Of course, you could also use deli buns or hoagie rolls to make a great fish sandwich…as we did with the leftovers!
